A little more detail…
The Rhubarb Triangle in Yorkshire is something of legendary status and it is no surprise that there is an abundance of these plants growing in many peoples’ back gardens. A nearby allotment grower, Dennis, takes great pride in using a forcing method to produce rhubarb stems of dreamy tenderness. He was our first supplier, where we were able to start the first fermentation within minutes of the plants being harvested.
The flavour of Rhubarb lends itself particularly well to vinegar as it has a natural tartness which we manage in the fermentation by balancing it with sweetness. This is a good all round wine vinegar that has a delicate taste and a beautiful pink appearance.
